Recipe: Cheesecake Brownie Cupcakes

Salam alaikum!

Lately, I've been craving for something cheese-ish & chocolatey at the same time. I thought of making an  oreo cheesecake but my parents weren't really a fan of cheesecakes and you know how cheesecakes only taste nice if you have a small slice. Anything bigger than the usual slice, I'll get really sick of it. That's my opinion though, I don't know about you hehe.

So..I made cheesecake brownie cupcakes!

This was really a trial and error kind of thing, I googled for a cakey brownie recipe cos the one I always use is pretty fudgey chewy and combined it with a cheesecake topping recipe. It tasted so good that I only got to grab two of em. My parents polished them off the plate when I wasn't at home T.T

This recipe yields about 20-24 cupcakes.

For the brownie cake:
3 cups of plain flour
1 cup + 2 tablespoons fine sugar
80g cocoa powder
1 tsp bicarbonate soda
1/2 cup sunflower oil
3 tsp white vinegar
1 tsp vanilla extract
125ml water

In a large bowl, mix flour, sugar, cocoa powder and baking soda with a handheld electric whisk on slow speed until all the dry ingredients are well combined.

Put the oil, vinegar, vanilla extract and water in a bowl and whisk to combine.

While the electric whisk is running in the flour bowl, slowly add the combined wet ingredients, increasing the speed of the blender as the mixture thickens.

Continue to beat until all the ingredients are incorporated.
Spoon the mixture into cupcake cases until two-thirds full. Set aside.

For the cheesecake topping: 
280g cream cheese
120g caster sugar2 eggs1 tsp vanilla extracta pinch of salt200g chocolate chips
Beat together cream cheese, sugar, egg, vanilla extract and salt in an electric mixer on medium-slow speed until smooth and fluffy. Stir in the chocolate chips by hand but don't overmix, otherwise the cream cheese will start to split.
Scoop about 1 tablespoon of the cheesecake topping on top of the cupcake mixture 
Bake in a preheated oven (170 deg cel) for about 20 minutes, or until the cupcakes have an even golden colour on the cheesecake topping.
