Chocolate genoise, butterscotch, strawberries, ganache!

One more cake recipe! I've been baking a lot these days but now that my exams are over..all thoughts of more and more ambitious bakes..poof! Gone! I think its just my way of dealing with stress and the fact that I get to serve this to the people I love and see their faces when they devour it, ah number one stress reliever! (:

Anws, similar to the previous one, this is a chocolate genoise. I think chocolate genoise is a really fuss free and easy to bake cake! If you're a newbie (like me!), you should definitely try it out. The ingredients are so simple and you get this beautiful cake after just about 20 mins in the oven.

So, this is a pretty rojak cake. I baked the chocolate genoise, slapped some whipping cream + strawberries in between, drizzled butterscotch sauce all over, sandwiched it with the other side of chocolate genoise cake, poured hot piping chocolate ganache all over and who can ever resist strawberries? Combination of chocolate and strawberries = match made in heaven! Hehe!

Chocolate Genoise Recipe:

  • 3 tablespoons hot melted unsalted butter

  • 1/2 cup cake flour

  • 1/4 teaspoon salt

  • 1/3 cup unsweetened cocoa powder

  • 4 large eggs

  • 2/3 cup  granulated white sugar

  • 1 teaspoon vanilla extract

I followed the steps from the previous genoise recipe! (:

Chocolate Ganache

  • 140 grams semi sweet chocolate, coarsely chopped

  • 1 cup heavy cream

  • Golden syrup

In a heatproof bowl set over a saucepan of simmering water, melt the chocolate and heavy cream. Add some golden syrup according to your preference.

Butterscotch Filling (drizzled all over whipping cream)

  • 4 tablespoons unsalted butter

  • 1 cup of tightly packed dark brown sugar

  • ¾ cup heavy whipping cream (not ultra-pasteurized)

  • 1 tablespoon vanilla extract

  • 1 teaspoon kosher salt

Butterscotch takes about a half an hour to make, from start to finish.

1 First, before you begin, make sure you have everything ready to go - the cream and the brown sugar next to the pan, measured and waiting. Making butterscotch is a fast process that cannot wait for hunting around for ingredients.

2 In a heavy bottomed stainless steel 2 quart saucepan, melt butter over low to medium heat. Just before butter is melted, add all dark brown sugar at once and stir with wooden spoon until sugar is uniformly wet.

3 Stir infrequently until mixture goes from looking grainy to molten lava. Make sure to get into the corners of your pot, and watch closely to notice how the mixture changes. It will take about 3 to 5 minutes.

4 Right before you add the cream, the caramelizing brown sugar will begin to look and feel more like liquid and less like thick wet sand.

5 At this point add all the cream at once and replace your spoon with a whisk. Lower heat a little and whisk cream into mixture. When liquid is uniform, turn heat back to medium and whisk every few minutes for a total of 10 minutes.

6 After liquid has been boiling on the stove for its 10 minutes, turn heat off and let rest for a minute or two before transferring into a heatproof storage vessel. (I prefer a stainless steel or glass bowl.) Cool to room temperature.

7 When butterscotch liquid is room temperature, take a small taste. It's important to know what cooked brown sugar and butter tastes like, and what happens when transforming that flat sweetness into real butterscotch flavor. Whisk in half the salt and vanilla extract. Taste again. Add more salt and vanilla extract until the marvelous taste of real butterscotch is achieved.

OOTD: hey orange!

Salam alaikum!

Gosh, its been really rainy these days so you might be wondering why on earth is this girl wearing sunnies? To hide my eyebags haha no I'm just kidding (I gave up hiding my eyebags long ago), it was really sunny one minute and then the next minute it was raining cats and dogs T_T but the rain's a blessing from Allah, so no complaining Nadia!

So..I've been really loving my paisley shawls!!!! Oh my, I used to wear my polkadot shawls all the time but it seems that its been quite some time since they've seen the light of the day! The paisley shawls are so adorable because in just one shawl, there's a mixture of up to 5 colors so I can match it with lots of clothes in my wardrobe hehe. This one's Blair, in case you're wondering ;)

The bag is the one I got at the Mitju sale I raved about in the last entry! Cheap! The actual price was 60 something if I'm not wrong but I got it at just 20 bucks. I'm a huge fan of lace so I think this is really pretty. They had it in black too but I practiced my once in a while self restraining skills and I walked away with just this one in tow. Proud of myself! Hehe you have no idea how lovely it is! Striking orange shoes were also from the Mitju sale. Only 15 dollars!

I've never worn a cropped top before so this is a first! Quickly got it in a few colors when I saw it on Btw, I just got to know that supre offers free international shipping now, and they were so fast! They arrived just 2 days after I placed my order. I've always loved cropped tops cos it looks so relaxed and casual so I paired it with sghijabgirl's black maxi skirt (which is out of stock for now, will restock!) I don't need to rave about this skirt do I? Its so comfyyyyyy hehe, you can check out Sghijabgirl's facebook page and read comments left by some of the buyers! Alhamdulillah they all loved it!

Anyways, a reader kindly sent me her picture with the polkadot shawls she bought from me and I felt really happy! Hahahaha! Please don't think I'm weird but its kinda nice to see people loving what they've bought from you :) So send me a picture wearing anything you bought from sghijabgirl? I will forever love you! ;D

OOTD: pink, green & paisley.

Salam alaikum!

Yay! Finally one OOTD entry after super long! My bestfriend told us Mitju's having their annual warehouse sale at Scape so off we went! Initial plans to drop by Singapore Expo disappeared into thin air cos we were in there for hours. Gosh, girls plus a huge room of shoes on sale is just a really bad combination for my poor wallet.

Anyways, I wore my new Paisley Shawl from sghijabgirl (love it to bits!), white blazer from Uniqlo (they're having a sale cos they just opened a store in Parkway), pink satin blouse from g2000 and my favourite green pants from zara. The t-bar wedges is from a store at FEP.

My very happy face upon seeing shoes at 8 dollars per pair hehe.


My bestfriend, Adillah was 'filtering'. You see, we grabbed everything we liked, sat in one corner and made our decisions, who's eliminated and who gets to be brought back home wahaha! Do you that too?

Thanks Aini baby for telling us all about the sale (She's the one who suggested we go to the sale and she's the one who went back home with a much much smaller loot than us T_T)

They have bags on sale too! ( I grabbed two, super cheap hehe)

Tomorrow's the last day! I think its really worth it, especially if you've always loved Mitju (like us! hehe!)

keep calm and bake a pretty pretty cake!

Couple of days ago, I was so stressed with my tonnes of assignments, I decided. Hey, let's take a break. I had some double cream in the fridge and strawberries so I tried out this recipe I've been eyeing for quite some time. Truth is, I'm no baking expert, I've never ever baked a cake in my entire life but I think this recipe is definitely for keeps. Even my mum was quite amazed that I got it right on my first time hehe!

I know it doesn't look like your proper pretty cake sitting on the fridge display like the ones we see at the usual bakeries but I like my cake messy. To me, the messier the better. More appetizing. But if you're really particular about decorating your cake then by all means, spend more time layering on the cream. For me, I just slapped a dollop and spread it in all directions. Took a bit of time trying to make the strawberries sit nice on the cake but other than that, I was pretty confident about it wahaha! I skipped the kirsch (obviously! haha!) and I also didn't have a cooking thermometer so I just estimated the temperature.'s the recipe (:

The génoise, a light, elegant sponge cake, is one of the building blocks of French baking, used as a base for both layer cakes and jelly rolls. The successful leavening of the cake depends solely on how much air is whipped into the eggs. Heating the sugar and whole eggs before whipping helps the eggs attain the maximum volume possible, although a slightly denser, still satisfying, version of the cake can be made without this step. Some génoises, such as this recipe, contain a little butter, which tenderizes the crumb.


For the génoise:

  • 4 eggs

  • 1⁄2 cup granulated sugar

  • 3⁄4 cup cake flour, sifted

  • 3 Tbs. unsalted butter, melted
    For the filling and finish:

  • 1/4 cup granulated sugar

  • 1/4 cup water

  • 1 tsp. kirsch 

  • 2 cups heavy cream

  • 2 tsp. confectioners’ sugar

  • 3 cups strawberries, hulled and cut into
    1⁄2-inch slices, plus 6 strawberries,
    halved lengthwise, for garnish


To make the génoise, preheat an oven to 375°F. Line the bottom of a 9-by-3-inch round cake pan with parchment paper.

In the bowl of an electric mixer, whisk together the eggs and granulated sugar by hand until combined. Place the bowl over but not touching simmering water in a saucepan. Gently whisk until the mixture registers 140°F on an instant-read thermometer, about 3 minutes. Put the bowl on the mixer and beat with the whisk on high speed until the mixture is pale and almost tripled in volume, 5 to 8 minutes.

Remove the bowl from the mixer. Sift the flour over the egg mixture in 2 additions and carefully fold in with a large rubber spatula. Fold a large dollop into the melted butter, then fold back into the egg mixture.

Pour the batter into the prepared pan and smooth the top. Bake until the top of the cake is browned, about 20 minutes. Transfer the pan to a wire rack and let cool completely.

Run a table knife around the edge of the pan and invert the cake onto a work surface. Turn the cake right side up, leaving the parchment paper in place. Cut the cake into 2 equal layers. Put the top layer, cut side up, on a serving plate.

To make the filling and finish, in a small saucepan over medium heat, combine the granulated sugar and water. Bring to a boil, stirring occasionally until the sugar dissolves. Remove from the heat and let the sugar syrup cool to room temperature.

In a small bowl, stir together the kirsch and sugar syrup. Brush the cake with about half of the syrup. Whip the cream and confectioners' sugar to soft peaks. Place the sliced strawberries in a bowl. Fold about one-fourth of the cream into the berries. Spread the mixture evenly on top of the cake. Position the remaining cake layer, cut side down, on top. Peel off the paper. Brush with the remaining syrup. Spread the top and sides of the cake with the remaining whipped cream.

Thinly slice 1 strawberry half and place it in the center of the cake. Arrange the remaining halves around the edge of the cake. Refrigerate until ready to serve. Serves 8 to 10.
